β-Carotene bleaching activity was determined in different solvent extracts from the potato: a tuber and microtuber extracts, b flesh and peel extracts. The bars represent standard deviations of three independent experiments. The significance and confidence levels were estimated using one-way ANOVA (p < 0.05).
